About meat processing (raw materials)
The raw materials for "Shika no Michi" are only carefully selected venison from Hokkaido that meets the strict regulations of Venison Kobo EBIJIN. After about 10 years of trial and error, EBIJIN has arrived at its unique bleeding and aging techniques, resulting in high-quality venison that is completely free of the odor typical of wild game.

● The deer must be under two years old (meat from deer over three years old becomes tough).
● The animal is not subjected to excessive stress during capture.
● To maintain freshness, the fish must be processed within two hours of capture.
About smoked processed products
Takamori Shoten specializes in manufacturing and processing smoked products. Using homemade woodchips that the makers themselves harvest and process themselves in the mountains as a heat source, they use no machinery and adjust the smoke and temperature according to the season, using the wisdom and intuition gained from years of experience. They pay particular attention to the ingredients and each step of the finishing process, controlling the smoke with their own intuition, and everything is done by hand.
