"Hokkaido Delicious Selection HOKKAICAN" was created in collaboration with Hokkai Seikan Co., Ltd., a symbol of the Otaru North Canal. It features seafood such as pacific saury and sardines caught in the waters off Hokkaido, seasoned with a local favorite.
Another appealing feature of this dish is the "chrysanthemum filling" technique, in which soft ingredients are packed one by one by hand. Although it is a time-consuming process, it prevents the fish from falling apart and is made with care to ensure a beautiful appearance when opened.
These sardines, known as "Nemuro Shichisei," are from Nemuro, Hokkaido. They migrate off the coast of eastern Hokkaido, where nutrients are abundant, making them known for their fatty, firm flesh. Each one is individually packed into a petal shape known as "chrysanthemum packing," and seasoned with Hokkaido soy sauce and sugar, with a touch of Japanese pepper.
