Hokkaido, known as the "Kingdom of Food" for its abundant seafood and agricultural products, is also famous as the kingdom of delicious sweets. It is also a major producer of agricultural and livestock products that are used as ingredients for sweets, such as sugar, wheat, red beans, and dairy products, and one of Hokkaido's charms is that it can handle everything from the production of the primary products that are used as ingredients to the processing of sweets.

Competition among confectioners is fierce, and although some sweets have a short history, they have fans all over the country due to their high quality. Hokkaido confectionery production began in southern Hokkaido back in the Edo period. At the time, sweets such as yokan and boro were made in addition to seafood as souvenirs when the Matsumae domain traveled to Edo for alternate attendance. Later, as Hokkaido's development progressed, confectionery production also flourished in Otaru, Sapporo, Asahikawa, and other cities.

After World War II, Hokkaido's sweets continued to develop. After a period of rapid economic growth, tourism in Hokkaido grew in popularity, and sweets that became nationally known began to appear. Although it may not have a long history, Hokkaido continues to produce a wide variety of sweets thanks to the abundance of high-quality ingredients and the tireless spirit of challenge of its artisans.

The "Old Otaru Warehouse" in which our store is located is one of the warehouses that represents the North Canal. Otaru Tile Baumkuchen

Otaru prospered as Kitamae ships from Kamigata (Kamigata) called at the port. Kitamae ships were merchant ships that traveled between Osaka and Hokkaido from the mid-Edo period until the Meiji period, buying and selling goods along the Seto Inland Sea and the Sea of Japan. All kinds of daily necessities such as rice, salt, sugar, sake, iron, cloth, and cotton traveled from Kamigata, while many other goods such as kelp, herring, herring dregs, and salmon traveled from Hokkaido.

The tiles used for the tiled roofs that can still be seen in the city of Otaru are one example of this. Not only were they used as a commodity, but tiles were also loaded onto the bottoms of Kitamae-bune ships to prevent ships from capsizing and to balance the center of gravity. In Otaru at the time, where fires were frequent, tiles were particularly popular among warehouses and wealthy shops. The appearance of these stacked tiles is expressed in "Kawara-yaki Baum" with the overlapping layers of Baumkuchen and the crispy texture of caramel.

The former Nippon Yusen Otaru Branch has a luxurious appearance that hints at the prosperity of Otaru during the Meiji period. The packaging of the "Otaru Honey Galette" features a design of the gold leather paper that was pasted throughout the VIP room. Enjoy the splendor of the former Nippon Yusen Otaru Branch with this galette.

"Galette" is a French word that refers to a flat, round pastry (Galette Bretonne), a traditional French pastry. This thick, crispy, buttery sable cookie is topped with the gentle sweetness of honey. It is a luxurious cookie that is golden brown all the way through to the center, allowing you to enjoy the flavor of butter and the fragrant aroma of flour.

Former Otaru warehouse story

Otaru Warehouse was Hokkaido's first commercial warehouse, established in 1893, approximately 130 years ago, by Nishide Magozaemon and Nishitani Shohachi of Hashidate, Ishikawa Prefecture, who had been in the shipping business since the Edo period. With a hipped tiled roof and a shachihoko (a carp) on top, the warehouse features a blend of Japanese and Western styles, and is laid out symmetrically around the brick office building (now the Otaru Department Store UNGA↑ store), creating an elegant and beautiful sight.

"Old Otaru Warehouse Tan" is a museum that recreates the building, which is Otaru City's designated historic building No. 13. Inside, you'll find rows of bite-sized "fondant au chocolat."

Fondant is a French word meaning "to melt," and it is a chocolate cake that is not cooked through, but is made so that the center remains soft. The meringue is thoroughly whipped and then mixed lightly by skilled artisans to incorporate as much air as possible, and then the rich, melt-in-your-mouth original raw chocolate is trapped in the center of the smooth, melt-in-your-mouth cake before being baked.

I want to explore Otaru

At its peak during the Showa era, there were more than 10 manufacturers of mochi dough in Otaru City, but now it has dwindled to just two. With one more manufacturer, there are now only three manufacturers left in the whole of Hokkaido. The Otaru manufacturer that makes the mochi dough for "Otaru Meguritai" still uses traditional techniques, completing every step by hand.

The ingredients are 100% Hokkaido glutinous rice, and the mochi dough is a very precious, authentic product that is still handmade to this day.

"Otaru Meguri Tai" is a nostalgic yet new Tai Monaka chocolate, made with chocolate and rice puffs in a 100% glutinous rice monaka shell baked in Otaru using traditional techniques. The packaging features icons of 23 sightseeing spots in Otaru.

Otaru Noh Theatre Japanese Tea Tray

Wasanbon sugar, a rare sugar that is essential for Japanese sweets and is one of Japan's traditional food cultures, is said to have been transported from Sanuki (Kagawa Prefecture) and Awa (Tokushima Prefecture) by Kitamae ships. Otaru is also home to the former Okazaki Family Noh Stage (Otaru City Noh Theater), Hokkaido's only Noh stage, built by Ken Okazaki, a wealthy merchant from Sado.

The Otaru Noh Theater Japanese Tea Tray uses wooden molds to express the Noh culture brought to Otaru by the Kitamae ships. Crafted by Otaru's Japanese confectioners, the trays use auspicious shapes such as boat shapes representing Kitamae ships and female Noh masks, as well as pine, bamboo, and plum. They come in four flavors: yuzu tea, plum kelp tea, roasted green tea, and matcha. They are characterized by their soft texture and elegant sweetness.
