Hokkaido has a unique sushi culture that is different from Edomae. As the slang term "Ezomae" suggests, there are many restaurants that use fresh seafood without preserving it in vinegar or salt.

Otaru has a large port and is known as a treasure trove of seafood, a bounty of Ishikari Bay, and is also famous as a city of sushi.The fresh, high-quality seafood gained a reputation, and young people who had trained all over the country from the Taisho to Meiji periods flocked to Otaru to open restaurants.

At its peak, there were nearly 200 sushi restaurants, but currently there are only about 120. There is an area in the city lined with sushi restaurants known as "Sushi Street," and there are famous restaurants that sushi connoisseurs visit from all over the country.

Located on the first floor of Vista Shinonome in Otaru City, this elegant restaurant has a Japanese atmosphere. The glass-walled interior is bright and clean, with a clean counter and private rooms, making it a great place to dine with children. This renowned restaurant has been awarded two Michelin stars and serves sushi and seafood snacks made with ingredients from Hokkaido. They also have a wide selection of original unpasteurized sake named after the restaurant, as well as local Otaru sake. Ise sushi

Received one star in the Michelin Guide Hokkaido 2012.

Ise Sushi was established in 1967. Its outstanding techniques and ingredients, using only natural ingredients, have attracted a constant stream of visitors from both within Japan and overseas. The second-generation owner has inherited the spirit and techniques of his predecessor, creating his own unique techniques. The restaurant was awarded one star in the Michelin Guide Hokkaido 2012. At the two counters, you can enjoy watching the craftsmanship and enjoying a relaxing conversation. In the back, there are two tables that seat four, where you can enjoy elaborate Edomae and Ezomae dishes that bring out the flavors of Hokkaido. Located a little off Otaru's famous "Sushi Street," this restaurant has a hidden atmosphere. It's about a 10-minute walk from Otaru Station. The second generation owner inherited the Edomae techniques from his predecessor and runs the sushi restaurant with a homey atmosphere, run together with his third-generation son. The chef, who has been making sushi for over 50 years, carefully prepares sushi using seasonal ingredients unique to Otaru. Any of the toppings on display can be served starting from just one piece. The chef's favorite saying is, "Everything I serve in my restaurant has to be delicious." Kozushi is committed to preparing everything, including the toppings, using traditional methods, and they also make their own eggs, pickled ginger, and sushi soy sauce. Currently run by a married couple in the second generation, this small family-run establishment with eight counter seats offers only three types of sushi: raw, premium, and special. Prices are 1,700 yen, 2,000 yen, and 2,600 yen, respectively, including tax. Even the "special" sushi, topped with super-fresh abalone, bluefin tuna, fatty tuna, and sea urchin, is surprisingly good value at just 2,600 yen. The restaurant's style of serving seasonal ingredients is left to the discretion of the chef, and its low-key atmosphere means many people drop in alone, making it a popular sushi restaurant. While not a staple in guidebooks, this sushi restaurant is a local favorite among those in the know.
